Blueberry Buckle Recipe
Blueberry buckle is a firm favourite with bakers and eaters alike. It’s basically a blueberry coffee cake with a crumbly topping. Whatever you choose to call it, this recipe is delicious on its own or served warm with ice cream. Buckle: A Classic Blueberry Dessert - ¼ cup (50ml) shortening
- ½ cup (125ml) sugar or Splenda
- 1 egg
- ¼ teaspoon (1ml) salt
- 1 teaspoon (5ml) baking powder
- 1/3 cup (75ml) milk
- 1 cup (250ml) all purpose flour
Cream the shortening and sugar, then add the egg. Sift the flour, baking powder and salt, and then add it to the mixture (alternating with adding the milk). Spread the mix in a greased 8x8 inch pan and sprinkle 1 cup (250ml) of blueberries on top of the batter. Then mix these ingredients together until crumbly: - ½ cup (125ml) sugar
- 1/3 cup (75ml) flour
- ½ teaspoon (2ml) cinnamon
- ¼ cup (50ml) butter
Sprinkle the mixture evenly on top of your batter, then bake at 350 F (180C) degrees for 45 minutes (or until a test stick comes out clean). This recipe is a decades-old favourite. Enjoy it with ice cream on a warm summer day. Or with ice cream on a cold winter's day... Do you really need an excuse?
