Blueberries & Sunday mornings

Here are some of my favorite ways to have blueberries. I try to cook as healthy as possible for my family but I do spoil them at times and those times just happen to be Sunday mornings. I buy a good wheat pancake mix and I take some of my frozen blueberries out of the freezer and add it to the mix. By the time I get ready to cook the pancakes the blueberries are starting to soften. Once they pop, you have little blueberry explosions in the pancakes. I also take about a half a cup of the frozen blueberries and put them in a pot add about 2 tablespoons of sugar and cook on medium low heat until it is a little thick. Add about a half of a tablespoon of the mixture to your pancakes to give them that extra umph. I love Sunday mornings. |
