Blueberries and Pancreatitis

I have a beautiful daughter, Mandy, who was diagnosed with
Pancreatitis about 4 years ago. Doctors are unsure why she was struck with this, no diabetes, no gallbladder abnormalities, no kidney
stones, doesn't drink alcohol, ect. In the beginning everything she
ate would usually upset the pancreas. We had to start out with literally only bland foods and water. As time went on, it has gotten somewhat better with following a strict diet. We try to be very creative with dishes or she seems to get bored and eat something that sends her pancreas into orbit.

After one of the hospital stays in the hot summer, she thought she might could keep down something cool to her stomach but couldn't tell me what. Here I go dashing off to the grocery store without a clue as to what to get.

There it was, right as you walk into the store, fresh bluberries and on sale too!

I pondered, blueberry cobbler, no too rich and buttery, bluberry pie, no too hot even with ice cream. I bought them anyway. Got home, put my creative mind to work and we've been in blueberry heaven every since.

Here are some of the dishes we came up with:

Blueberry Salad

1 med. tub Cool Whip-thawed
1 can Eagle Brand Condensed Milk
1 can Blueberry Pie Filling
2 cups miniature marshmallows
1 cup chopped pecans
1 can chunk pineapple-drained (optional)

Mix everything in a large bowl or serving dish. Set in refrigerator overnight. Serve


Blueberries and Ice Cream

Fresh blueberries
1 tub frozen Cool Whip

Serve Cool Whip frozen just as you would ice cream. Top with fresh blueberries.


Stars and Stripes Cake

1 box cake mix-white
1 small box red jello
1 tub thawed Cool Whip
Fresh strawberries
Fresh blueberries

Bake cake as per box directions in a 13x9 oblong pan. Let cool appx. 10 minutes. Poke holes in top of cake with end of wooden spoon. Prepare jello as per box instructions. Pour jello on top of cake. Let cool. Frost with Cool Whip. Lay whole or halved fresh strawberries in stripes on top of cake except for left top square. Place fresh blueberries in top left square as if stars on the flag. Refrigerate until ready to serve.
