Angel Cake and Wild Blueberries:
A Marriage Made in Heaven

    Ingredients:

  • 1 box cake mix (angel food)(or you can use an already made store-bought cake)
  • ˝ cup/125ml sugar
  • 1 pint/500ml heavy cream
  • 1 teaspoon/5ml vanilla extract
  • 1 pint/500ml wild blueberries – you can of course, use frozen or fresh store-bought as well. Just make sure the frozen berries have thawed before putting the cake together.

Cut the cake into 3 equal(ish) layers. Whip the cream and when it begins to get thicker gradually add the sugar and vanilla. Fold in the blueberries.

Then spread the mixture between the cake layers. Make sure you leave some to frost the top and sides of the cake. Because that’s the best part!

Refrigerate before serving.
